It’s National Popcorn Day!

And that means it’s time for Sinfully Sweet & Salty Honey Butter Popcorn! One of my favourite things about movie theaters (and blockbuster if you are old enough to know what that is), is the smell of freshly popped popcorn with the salty and sweet butter topping, yum! Even if the movie isn’t what I expected the popcorn makes the night. So when I started beekeeping and was researching all kinds of honey recipes I was so happy to find a plethora of honey popcorn options. Over the years I have made adjustments and fine-tuned this recipe to pure sweet and salty bliss, there is no better way to celebrate #nationalpopcornday than with a batch of this!

“Join us on January 19 is National Popcorn Day! Buttered, salted, kettled, drizzled with caramel, popcorn is one of those snacks perfect anytime, anywhere. It’s great on the go, in the theater, or in your living room! Just be prepared to dig some of it out of your teeth. Did you know that the corn we eat and the corn we pop are two different varieties of maize? In fact, the corn you’d find on your dinner table is most likely unable to pop at all!”

‘Native Americans have also been found to consume and utilize popcorn in their day to day lives. In a cave in Utah, thought to be inhabited by Pueblo Native Americans, popcorn has been found that dates back to over 1,000 years ago. French explorers who traveled to the new world discovered popcorn being made by the Iroquois Natives in the Great Lakes region. As colonists moved around North America, and as the USA came to be, many people adopted popcorn as a popular and healthy snack.”

Equipment

  • 1 heavy-bottomed pot

Ingredients

  • 2 tbsp Extra-Virgin Olive Oil or Coconut Oil
  • 1/2 cup Popcorn Kernels
  • 2 tbsp Wildflower Honey
  • 2 tbsp Butter
  • 1 tsp Vanilla
  • Salt to Taste

Instructions

Make Your Popcorn

  • In a large, heavy-bottomed saucepan over medium heat, combine the oil and 2 popcorn kernels. Cover the pot and wait for the two kernels to pop, which might take a few minutes. In the meantime, place a large serving bowl near the stove so it’s ready when you need it.
  • Once the two kernels pop, turn off the burner, remove the pot from the heat and pour in the remaining popcorn kernels. Cover the pot again, and give the pot a little shimmy to distribute the kernels evenly. Let the pot rest for 60 seconds to make sure the oil doesn’t get too hot before the kernels are ready to pop.
  • Turn the heat back up to medium, put the pot back onto the burner and continue cooking the popcorn, carefully shimmying the pot occasionally to cook the kernels evenly. Once the kernels start popping, tip the lid just a touch to allow steam to escape.
  • Continue cooking until the popping sound slows to about one pop per every few seconds. (If the popcorn tries to overflow the pot, just tip the upper portion of popcorn into your bowl and return it to the heat.)
  • Remove the lid and dump the popcorn into your serving bowl.

Make Your Topping

  • Melt the butter in a small saucepan over medium heat. Once melted, stir in the honey and mix well. Remove from heat and add the vanilla.
  • Sprinkle the popcorn with a couple pinches of salt, to taste, then toss the popcorn and serve immediately, for best flavor and texture. The popcorn will taste good for several hours, though.
