A Taste of Summer: How to Make the Perfect Strawberry Honey Jam

It’s Strawberry Season Here in Ontario


One of my favourite summer traditions is berry picking with my mom. We go to our local you-pick farm early in the morning, and fill a few baskets before my workday begins. Most of the berries are hulled/prepped and frozen in ziplock bags, in 1-cup quantities. This makes them easy to use for baking during the winter months. The rest are used fresh, for the next couple of weeks, in berry frittatas, oat and berry bakes, and all means of fresh berry breakfasts. But I always make sure to put enough aside to make this strawberry Honey jam.

Love this jam for 4 local ingredients, no processed sugar, and aroma. It fills your house with berries and honey scent. You can find most of the ingredients locally in Ontario, and none of them are processed. But I think what I love the most about making this jam is how it makes my whole house smell of berries and honey. 

Spread it on toast or a charcuterie board, but my favourite way is to spread it over a flaky pie crust. The jam should cover the crust in a layer that’s about 1 inch thick. Bake it until the crust is finished, then it’s ready to eat! My Grandmother would make jam tart all the time when I was growing up using store-bought jams. This was easily my favourite treat with our afternoon tea. I didn’t start keeping bees until a few years after she passed away. But I always wish I could go back in time and we could share a piece of jam tart made with honey from my bees, and handpicked strawberries over afternoon tea.

Strawberry Honey Jam

Strawberry Honey Jam

You'll be singing strawberry fields forever after trying this amazing 4 ingredient jam. The best part? If you make it in season you can use primarily local ingredients, it's the perfect summer recipe. Plus, you can, can the extras to enjoy during the long, cold winter months when you could really use a taste of summer. For a truly memorable jam, use micro batch, local honey. You will enjoy the floral notes and lightly sweet taste, which will complement the strawberries.

Equipment

  • Food Processor or grater
  • Stockpot
  • Strawberry huller
  • Potato masher or immersion blender
  • freezer-safe jars, or canning jars and a hot water bath canner

Ingredients
  

  • 6 lbs strawberries
  • 3 cups local honey *see notes below
  • 2 small granny smith apples
  • 1.5 tbsp. lemon juice

Instructions
 

  • Hull strawberries and cut each strawberry in half (or quarters if large), and place in a large stockpot.
  • Cut the sides of the apples away from the core and grate the apple leaving the skins on, you could also use a food processor. Once grated place in the stockpot with the strawberries.
  • Add the lemon juice and honey into the stockpot and stir.
  • Heat mixture on high until boiling, stirring occasionally. As soon as the mixture begins to boil, reduce heat to medium-low to simmer.
  • Simmer for approximately 15 minutes until the strawberries become soft. Using an immersion blender or a potato masher, mash the strawberries so there are no recognizable, whole sections.
  • Simmer for another 45-60 minutes, stirring occasionally. The longer the mixture simmers, the thicker the consistency. (Remember, this will not be as thick as the consistency made with sugar and/or pectin).
  • The completed strawberry honey jam can either be placed in freezer-safe jars and stored in the refrigerator or freezer or canned using a hot water bath canner with 10 minutes of processing time.

Notes

*If you are using fresh-picked or sweet strawberries or if your local honey is strong in flavor, reduce the amount used, instead use 1 1/2-2 cups of honey.
* For a truly memorable jam, use a small batch, of local honey. You will enjoy the floral notes and lightly sweet taste, which will complement the strawberries.
