Honey Apple & Jack Frittata

Equipment

  • 1 medium oven-safe skillet
  • 1 apple peeler or a corer and potato peeler
  • 1 cutting board & knief or a food processor

Ingredients
  

  • 1 tbsp olive oil or canola oil
  • 1 onion medium, chopped
  • 1 bell pepper red or green, seeds and ribs removed, chopped
  • 1 garlic clove minced
  • 1 apple medium, (granny, smith, empire, braeburn), peeled, cored, and thinly sliced.
  • 2 tbsp honey
  • 1/2 tsp dried sage
  • 1/4 tsp ground mace
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper freshly ground
  • 1/2 cup cheddar, jack grated or favorite melting cheese
  • 10 eggs - large fresh from the farm tastes best

Instructions
 

  • Preheat the oven to 350, and heat the oil on the stovetop in a medium oven-safe skillet over low heat. Add the onion, bell pepper, and garlic and cook until the onion is tender, about 15 minutes
  • add the apple to the vegetables and cook for 5 minutes.
  • meanwhile beat the eggs with honey, sage, mace, and salt and pepper to taste. Pour over the vegetables. Sprinkle with the cheese.
  • Place skillet in the oven and bake for for 30-40 minutes, until eggs have set all the way through. You may want to shut off the oven and turn on the broiler for a minute or two to firm up the top and ensure the cheese is melted. Serve warm or at room temperature.
