Honey Apple & Jack Frittata

1 medium oven-safe skillet
1 apple peeler or a corer and potato peeler
1 cutting board & knief or a food processor
- 1 tbsp olive oil or canola oil
- 1 onion medium, chopped
- 1 bell pepper red or green, seeds and ribs removed, chopped
- 1 garlic clove minced
- 1 apple medium, (granny, smith, empire, braeburn), peeled, cored, and thinly sliced.
- 2 tbsp honey
- 1/2 tsp dried sage
- 1/4 tsp ground mace
- 1/4 tsp sea salt
- 1/4 tsp black pepper freshly ground
- 1/2 cup cheddar, jack grated or favorite melting cheese
- 10 eggs - large fresh from the farm tastes best
Preheat the oven to 350, and heat the oil on the stovetop in a medium oven-safe skillet over low heat. Add the onion, bell pepper, and garlic and cook until the onion is tender, about 15 minutes
add the apple to the vegetables and cook for 5 minutes.
meanwhile beat the eggs with honey, sage, mace, and salt and pepper to taste. Pour over the vegetables. Sprinkle with the cheese.
Place skillet in the oven and bake for for 30-40 minutes, until eggs have set all the way through. You may want to shut off the oven and turn on the broiler for a minute or two to firm up the top and ensure the cheese is melted. Serve warm or at room temperature.
