If you visit your local dairy or farm market you are sure to find a local jack cheese as well. 

September is also the month when our weather starts to move into the lower temperatures and in some years the first frost hits before the end of the month, on these colder mornings, I like nothing better than having a hot, hearty breakfast. You will love the combination of sweet, sharp, and savory in this dish. It makes a quick and easy breakfast that impresses.

Tips For Making The Perfect Frittata

Making a frittata may seem daunting at first, but it’s actually a simple and versatile dish that can be customized to your liking. Here are some tips for making the perfect frittata:

Use a non-stick skillet:

Using a non-stick skillet will prevent your frittata from sticking to the pan and will make it easier to slide out of the pan when it’s done.

Don’t overmix the eggs:

When whisking the eggs, be careful not to overmix them. Overmixing can result in a tough and rubbery frittata. Instead, just whisk until the yolks and whites are well combined.

Cook the fillings before adding the eggs:

It’s important to cook any vegetables or meats before adding the eggs to the skillet. This ensures that they are fully cooked and won’t release excess moisture into the frittata.

Honey Apple & Jack Frittata

Honey Apple & Jack Frittata

You will love the combination of sweet, sharp and savory in this dish. It makes a quick and easy breakfast that impresses.

Equipment

  • 1 medium oven-safe skillet
  • 1 apple peeler or a corer and potato peeler
  • 1 cutting board & knief or a food processor

Ingredients
  

  • 1 tbsp olive oil or canola oil
  • 1 onion medium, chopped
  • 1 bell pepper red or green, seeds and ribs removed, chopped
  • 1 garlic clove minced
  • 1 apple medium, (granny, smith, empire, braeburn), peeled, cored, and thinly sliced.
  • 2 tbsp honey
  • 1/2 tsp dried sage
  • 1/4 tsp ground mace
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper freshly ground
  • 1/2 cup cheddar, jack grated or favorite melting cheese
  • 10 eggs – large fresh from the farm tastes best

Instructions
 

  • Preheat the oven to 350, and heat the oil on the stovetop in a medium oven-safe skillet over low heat. Add the onion, bell pepper, and garlic and cook until the onion is tender, about 15 minutes
  • add the apple to the vegetables and cook for 5 minutes.
  • meanwhile beat the eggs with honey, sage, mace, and salt and pepper to taste. Pour over the vegetables. Sprinkle with the cheese.
  • Place skillet in the oven and bake for for 30-40 minutes, until eggs have set all the way through. You may want to shut off the oven and turn on the broiler for a minute or two to firm up the top and ensure the cheese is melted. Serve warm or at room temperature.
