Shaved Apple, and Honey, Brie Crostini

This is a wonderful appetizer to make in the fall when fresh honey & apples are abundant in Ontario. However, it is such a crowd-pleaser that it will quickly become your go-to, whenever you have company over especially during the holidays.
Prep Time 8 minutes
Course Appetizer, Snack
Servings 14 pieces

Equipment

  • 1 mandoline slicer
  • 1 baking sheet
  • 1 serving platter

Ingredients
  

  • 1 Baguette cut into ½ inch slices
  • 6 oz Brie
  • 1 large Honeycrisp apple *see notes below
  • 1 fresh lemon just need a squeeze of juice
  • Wildflower Honey for drizzling over
  • Chopped walnuts for topping each slice
  • 2 Sprigs of rosemary (optional) for topping each slice

Instructions
 

  • Preheat the oven to 375 degrees and slice your baguette into 1/2 inch pieces.
  • Line the baking sheet with parchment paper, and place the 1/2-inch pieces of baguette spread out over the baking sheet. Next slice the brie into thin pieces and place on top of each crostini. Place the baking sheet in the oven and bake for 5-7 minutes or until brie is melted.
  • While the crostini is in the oven, shave the apple using the mandoline, into thin slices. Next squeeze some of the lemon juice over the apple slices to keep them from browning.
  • Remove the crostini from the oven and place them onto your serving platter, next top with the shaved apple slices. Drizzle the honey over each crostini and sprinkle with chopped walnuts evenly over the crostini. Finally, if desired, add a very small piece of the rosemary to each crostini immediately.

Notes

  • Offering a counterpoint to the creamy Brie, Golden Delicious, Ambrosia and Honeycrisp are great options for this appetizer.
